Scones with jam and clotted cream

Do you remember the scones we wrote about in our post about British Snacks and Desserts? The past couple of weeks I made them several times and I can’t get enough of them, so I would like to share the recipe I use with you!

Ingredients (for 16 scones):

  • 500 gram self-raising flour
  • 5 tea-spoons baking powder
  • 1 tea-spoon salt
  • 2 bags of vanilla sugar
  • 4 dinner-spoons granulated sugar
  • 100 gram non-salted butter
  • 2 eggs
  • 150 ml semi-skimmed milk

For the topping:

  • Jam (strawberry or raspberry)
  • Clotted cream

Put all ingredients together in a bowl except from the milk and eggs. Mix the milk and egg together and take 2 spoons of this mix out (to use as a topping later on). Add the rest of the mix to the other ingredients and knead with your hands. Spread the dough out over and cut 16 circles of 1-1.5 cm thick out of it and put them on a baking plate. Add the milk-egg mix on top and your scones are ready to go into the oven!

Bake the scones for 10 minutes on 225 degrees. Serve the scones with jam and clotted cream and enjoy!

Dutch pancakes

Next up, one of my personal favourites, which I eat very often; Dutch pancakes.  Dutch pancakes are flat big pancakes which can be filled with all kinds of topics. Think about an apple pancake, cheese pancake, strawberry pancake, banana pancake and many more! Visit the website of a pancake restaurant for more topic inspiration. The ingredients for 8-10 pancakes are simple;

  • 4 Eggs
  • 500 ml Milk
  • 300 gram Flour
  • Little bit of salt (it is also possible to make without the salt)
  • Baking butter

Mix the ingredients together to a smooth mass and use the baking butter to bake the pancakes in a pan. Add the topings of your choise and your pancakes are ready!
